Citrus Whip
Take advantage of citrus season with this easy, two-ingredient citrus whip.
YIELD: Makes about 6 servings
INGREDIENTS:
For the citrus whip:
6 oranges, or similar citrus (you could use sumo citrus, tangelos, etc.)
1/4 cup agave
Optional garnish:
A drizzle of high-quality olive oil
A sprinkle of flaky salt
TOOLS:
Food processor
Parchment paper
Sheet tray
INSTRUCTIONS:
Peel the citrus and separate the segments. Space the segments out on a sheet try lined with parchment paper, and freeze for 4-8 hours until frozen solid.
Place the frozen citrus segments and agave in a food processor, then blend until smooth. This process can take a couple minutes, and you may need to stop a few times to scrape down the sides as necessary. Once smooth and creamy, you can serve immediately by scooping some of the citrus whip into a bowl, drizzling with olive oil and sprinkling with flaky salt.
Alternatively, you can save the citrus whip for later use by freezing in an airtight container. When ready to use, break the citrus whip up into smaller pieces that fit in the food processor, and blend until smooth again.
